It is tradition in my house to start off our Christmas baking with Shortbread Cookies and has been since my sister and I were very young. Our mother used to guide us with each ingredient, let us mix the batter, roll it out, and the best part, decorate them! Even to this day, we wait for our mom to bake these cookies with us.
The recipe for "Grandma's Shortbread Cookies", which we found on our cornstarch box, is very simple and straightforward. It of course includes the cornstarch, but also icing sugar, flour, and butter. The result is a very nice dough that is easy to roll out.
We always use a variety of Christmas cookie cutters to cut these out, like a gingerbread man, angel, candy cane, Christmas tree, and star, and decorate them with a variety of sprinkles and sometimes maraschino cherries. The final baked cookie is somewhat crisp, but when you take a bite, it almost melts in your mouth. As usual, cookies are best when they're right out of the oven, but we've found that they keep well enough in the freezer if you want to save them for Christmas day.
